Salmon is an incredibly nutritious fish with lots of healthy fats to keep you full and satisfied. Crispy lettuce encases hot, spicy grilled salmon, cucumber, fresh chili, and cream cheese. Great for a dinner party snack, or a decadent light lunch for keto and non-keto eaters to enjoy.

How to make:

  • Place the salmon filets into a bowl and add the olive oil, chili, salt, and pepper, stir to coat the salmon and leave to rest for about 30 minutes
  • Place a non-stick frying pan over a medium-high heat
  • Lay the salmon filets onto the hot pan, skin-side down and fry until the skin is crispy, turn the filets over to cook the other side. You want the salmon to be cooked but with a little strip of rare pink in the middle, set the salmon aside
  • Stir together the cream cheese and scallions until it reaches a thick, spreadable consistency
  • Lay the lettuce leaves onto a board and lay a couple of cucumber slices onto each one
  • Dollop the cream cheese onto the cucumber and spread if you can, it doesn’t need to be tidy
  • With a fork, flake the cooked salmon filets into large pieces and divide them between the lettuce leaves, laying over the top of the cream cheese
  • Roll the wraps into burrito-shaped parcels and serve immediately to make the most of the crispy lettuce
