Keto Pancakes With Crispy Bacon and Vanilla Cream

These keto pancakes are soft, fluffy, and have a vibrant hum of lemon. They’re served with crispy bacon and vanilla whipped cream for a totally over-the-top, decadent breakfast. Great for special occasions or to treat a special person…such as yourself!

How to make:

  • In a large bowl, whisk together the melted butter, sour cream, eggs, and lemon zest until smooth
  • Add the ground almonds and baking powder and stir to combine
  • Spray a non-stick frying pan with oil spray and place over a medium heat
  • Drop dollops of pancake batter onto the hot pan and fry on both sides until golden
  • Once all of the batter has been used up, add the bacon rashers to the hot pan (keep it over the medium heat) and fry until crispy
  • As the bacon fries, use a hand-held egg beater to whip the cream, vanilla, and sweetener to a soft, pillowy consistency
  • Divide the pancakes between 4 plates and make a neat stack
  • Lay the bacon over the pancakes, and finish with a dollop of vanilla cream on the side
  • Enjoy right away so the pancakes and bacon are warm as you devour them
