I absolutely LOVE Easter. It’s more relaxed than Christmas and has the most delicious treats associated with it. We can’t have hot cross buns or regular chocolate eggs, so I’ve created a little menu of Easter treats which are unconventional yet very satisfying. We have a creamy dessert, a chocolate dessert, a lemony dessert and two delicious savory dinner courses.

Creamy Berry Ambrosia

My idea of ambrosia (others may have different versions!) is a perfect balance between soft-whipped cream, full-fat yogurt, berries and dark chocolate. If I weren’t on keto I would add lots of marshmallows too. This is the kind of dessert which you simply scoop generously into a bowl or glass dessert cup and eat with a spoon.

Keto Chocolate Mint Brownies

Mmmm….brownies. You may be a little outraged to see I have added mint flavor to these brownies. By all means, if you hate mint with your choc, leave it out! But I think it’s a great combo and a refreshing change for Easter. These brownies are rich, fudgy and incredibly satisfying.

Roast Chicken With Buttery Beans and Cauliflower Cheese

If you’re having the family over for Easter lunch or dinner, a roast chicken is absolutely the way to go. It’s keto-friendly but even non-keto family members will adore it. We serve our chicken with buttered green beans and cauliflower baked in the oven with a rich cheese sauce.

Brussels Sprout, Bacon and Parmesan Bake

Every Easter table needs a hot, cheesy bake. We can’t have a pasta bake or potato bake, but we can have something even better…Brussels sprouts and bacon! We top everything off with three cheeses. We can indulge, it’s Easter.

Gooey Lemon Bars

While lemon is basically the opposite of chocolate in every way, it still deserves a spot on the Easter menu, especially if it comes in the form of lemon bars. These bars are gooey, super tangy, sticky and keto-friendly!
