Chia, Chocolate and Coffee Tiramisu Pudding

This recipe can be enjoyed for dessert or breakfast! It’s my take on the classic flavors tiramisu, made with chia seeds and Keto 22 Multi Collagen Chocolate Protein Powder. Chia seeds are so dense with nutrition, they’re a wonderful source of healthy fats and fiber. We use instant espresso for that absolutely crucial coffee flavor, and to mimic the flavor of amaretti biscuits we use a tiny drop of almond essence. A pinch of salt brings out the chocolate flavor (not a traditional tiramisu staple but hey!). For dessert, place a big dollop of whipped cream over top and enjoy. For breakfast? You can still add the cream! But for something lighter just leave the pudding plain.

  • Time: approximately 10 minutes prep time plus overnight in the fridge

  • 6 Tbsp chia seeds (I use black chia seeds)
  • 2 scoops Keto 22 Multi Collagen Chocolate Protein Powder
  • 1 tsp instant espresso powder, dissolved in 1 Tbsp hot water
  • 1 cup unsweetened almond milk
  • ⅛ tsp almond essence (this stuff is very strong and too much can be very perfumey)
  • Tiny pinch of sea salt


How to make:

  1. Place all ingredients (except the heavy cream topping) into a small to medium-sized bowl and stir to combine, (a whisk or fork is helpful here!)
  2. Place the bowl into the fridge overnight to set (if you can, give it a stir during the first few hours of setting just to help the texture along and avoid any hard lumps of chia seeds at the bottom)
  3. When it’s time to serve, give the pudding a good stir and scoop into serving bowls or dessert dishes
  4. Top with your whipped cream and Keto 22 Multi Collagen Chocolate Protein Powder mixture
