Cauliflower, Bacon and Coconut Soup

A big bowl of soup with a side of keto bread and butter…what more do we want? (Apart from some warmer weather!). This soup has a base of cauliflower for creaminess in color and texture, with coconut cream for creamy flavor and a hint of the tropics. We finish the soup with crispy bacon and a good crack of pepper.


How to make:

  1. Drizzle the olive oil into a large soup pot and place over a medium heat
  2. Add the onion, garlic and celery to the pot and stir as they soften
  3. Add half of the bacon and stir into the veggies, allow it to cook and sizzle for a few minutes
  4. Add the cauliflower, stock, coconut cream, salt and pepper to the pot and stir to combine
  5. Place the lid onto the pot and lower the heat so that the soup simmers gently
  6. Simmer for about 45 minutes or until the cauliflower is really soft
  7. While the soup is simmering, fry the rest of the bacon until crispy and set aside
  8. Use a hand-held stick blender to blend the soup until super smooth and creamy
  9. Serve with a sprinkle of bacon on top, and a good dose of cracked pepper
