I’m sure there are many people who would absolutely balk at the idea of replacing potatoes with Brussels sprouts. But seriously, they are such an incredible vegetable when treated right. These Brussels sprouts are roasted with butter, bacon, garlic, and walnuts. So good you won’t even be gazing longingly at the potato dish across the table.

Ingredients:
- 1 Tbsp olive oil
- 6 rashers of streaky bacon, cut into small pieces
- 3 Tbsp butter
- 2 garlic cloves, finely chopped
- 24 Brussels sprouts
- ½ cup chopped walnuts
- Salt and pepper
How to make:
- Preheat the oven to 390 degrees Fahrenheit/200 degrees Celsius
- Drizzle the olive oil into a frying pan and place over a medium-high heat
- Add the bacon to the pan and toss as it fries
- Add the butter and garlic to the pan and stir as the butter melts and the garlic softens
- Place the brussels sprouts into a baking dish and pour the butter, garlic, and bacon over the top
- Sprinkle the walnuts over the Brussels sprouts and sprinkle with salt and pepper
- Roast the Brussels sprouts in the oven for 30-40 minutes until golden and just beginning to soften (some ovens are hotter than others so your cooking time may vary)
- Serve with turkey and a glass of mulled wine
