Bacon, Egg, Mushroom and Cheese Muffins

Eggs, bacon, mushrooms, cheese and parsley all come together to create these tasty muffins filled with protein and fat. They’re more like little crustless quiches, but we call them muffins cause they’re made in muffin pans.


How to make:

  1. Preheat the oven to 320 degrees Fahrenheit and grease a muffin pan with butter
  2. Place a non-stick frying pan over a medium-high heat and add the bacon pieces, allow them to sizzle and release their fat into the pan
  3. Add the mushrooms to the pan and stir to coat in the bacon fat, allow them to cook until soft, stirring occasionally. Set aside when cooked
  4. Whisk together the eggs, cream, salt and pepper and carefully pour into the muffin holes
  5. Divide the mushrooms, bacon, parsley, cheddar and feta between the muffin holes and gently press to submerge in the egg. You can reserve a little of the grated cheddar to sprinkle over the top, if you wish
  6. Place into the preheated oven and bake for about 15 minutes or until just set (every oven is different, so keep an eye on them!)
  7. Leave to cool before transferring from the muffin pan to an airtight container
  8. Store in the fridge
